I-TAL, standing for “Vital” in the Rastafarian culture, is a plant-based diet principally intended to improve health and energy. Based on the lifestyle and culinary choice of Rastafarians in the Carribean, it centers around the philosophy that a natural diet focused on the vitamins and minerals available in plants, without harming animals, can enhance one’s life and help bring them closer to the universal life force energy in Mind, Body, and Spirit.
The I-TAL restaurant with its organic garden is tucked behind Coubaril Valley, sitting amongst the trees on top of a beautiful hillside. We invite you to discover a world of organic gardening and to experience lunch or dinner with a panoramic view of Cariblue Bay. Enjoy a different culture with a sustainable meal that is equally healthy, nutritious, and organically grown—completely natural and filled with all the nutrients to fuel the body, mind, and soul.
The I-Tal Experience
Your time at I-TAL begins with a guided walk where expert gardeners lead you to explore our hillside oasis. Our garden is a polyculture of diverse local and exotic edible plants and fruit trees. You will learn about some of the wonderful benefits of our crops, and best of all, you get to harvest ingredients that will then be prepared on-site. The I-TAL chef and her team will narrate the cooking process by explaining the flavour profiles of each ingredient. This experience allows you to appreciate how even the most unsuspecting pairings go perfectly together and how food can nourish your body while simultaneously stimulating your senses.
The daytime experience starts at 11:00 am with a 40 to 50-minute garden tour, followed by preparing food and lunch, and at 5:00 pm for dinner with an optional shortened tour. Should you not take a garden tour, then a 5:30 pm pickup can be arranged. Lunch and dinner are available on Mondays, Wednesdays, and Fridays. Private functions and private cooking classes are also available at the I-TAL Restaurant at other times. I-TAL is not part of the all-inclusive offering, and to take part, there is a supplement of US$75pp for lunch and US$90pp for dinner that will be charged to your account.
